Who loves pancakes?

To eat delicious food that also nourishes your body is a good combination.

I was approached to make a delicious recipe on pancakes. There are so many good recipes, but I felt inspired making a new one. It turned out SOOO good.

Makes 7 pieces.

Ingredients

  • 90 g Buckwheat flour (or sifted ancient flour/ almond flour
  • 1 Tbsp arrowroot (potential replaced with psyllium husk )
  • 1½ tsp baking powder
  • ¼ tsp Himalayan salt
  • 1 tsp cardamom
  • ½ cup coconut milk
  • 3 Tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 2 Tbsp melted coconut oil

Directions

  1. Mix all the dry
  2. Mix all the wet
  3. Mix the batter until there are no lumps.
  4. Fry the pancakes in coconut oil. Use one spoonful of batter per pancake.
  5. Let them fry under a lid, this makes it even more fluffy.
  6. When you see the batter on top has solidified, flip it. Fry it on the other side for some seconds, until it`s gotten a nice crust.

Eat them as they are or with maple syrup, fresh berries, or with your favorite topping.
